Ingredients
  

  • 2 cans cannellini beans or 1 cup dried
  • 2 cups fresh basil
  • 4 garlic cloves
  • 1/4 cup olive oil
  • 1 lemon juice + zest
  • 1 tsp salt
  • 1/2 tsp black pepper
Optional:
  • Chili flakes
  • Vegetable stock
  • Cherry tomatoes

Method
 

  1. Drain and rinse beans.
  2. Heat olive oil in pan over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add beans and stir gently.
  5. Pour in stock and season.
  6. Simmer for 10 minutes.
  7. Add basil and lemon juice.
  8. Adjust seasoning and serve warm.
