The Ultimate Classic Caesar Salad

Ingredients
  

  • 2 hearts of Romaine lettuce
  • 1/2 cup Shaved Parmesan cheese
For the Dressing:
  • 2 egg yolks
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 cloves garlic minced,
  • 2 anchovy fillets mashed,
  • 1/2 cup olive oil.
For the Croutons:
  • 2 cups sourdough bread torn,
  • 2 tbsp olive oil pinch of salt.

Method
 

  1. Toss torn bread with oil and salt; bake at 375°F for 10 mins until golden.
  2. In a bowl, whisk yolks, mustard, lemon, garlic, and anchovies.
  3. Slowly drizzle in olive oil while whisking constantly until thick and creamy.
  4. Toss dry Romaine leaves with dressing and half the Parmesan.
  5. Top with croutons and remaining Parmesan.

Notes

  • For a chicken Caesar, add 1 lb of grilled chicken breast.
