Ingredients
  

  • 4 medium carrots peeled and sliced into long strips
  • 2 tablespoons liquid smoke
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • Optional: fresh dill for garnish

Instructions
 

Prepare the Carrots:

  • Peel and slice the carrots into long strips, similar in size to smoked salmon.

Make the Marinade:

  • In a bowl, mix together the liquid smoke, soy sauce, maple syrup, smoked paprika, salt, and olive oil until well combined.

Marinate the Carrots:

  • Place the carrot strips into a shallow dish and pour the marinade over them. Ensure all pieces are well coated. Cover and refrigerate.

Chill:

  • Let the carrots marinate for at least 12 hours, or overnight for the best flavor. The longer they sit, the more flavorful they will become.

Serve:

  • After marinating, remove the carrots from the marinade and slice them thinly. Serve on bagels with cream cheese, or enjoy them in salads or as a topping for crackers.
