Ingredients

  • All-purpose flour: 2 cups
  • Granulated sugar: 1 ½ cups
  • Baking powder: 2 teaspoons
  • Salt: ½ teaspoon
  • Unsalted butter softened: 1 cup (2 sticks)
  • Eggs: 4 large eggs
  • Fresh key lime juice: ½ cup
  • Key lime zest: 1 tablespoon
  • Sour cream: ½ cup
For Glaze (Optional):
  • Powdered sugar: 1 cup
  • Fresh key lime juice: 2 tablespoons
Garnish:
  • Fresh lime slices fresh mint leaves, and toasted coconut flakes.

Method

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
  2. Beat Butter & Sugar: In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy.
  3. Add Eggs: Add the eggs one at a time, beating well after each addition until smooth.
  4. Combine Dry & Wet Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Slowly incorporate the dry mixture into the wet ingredients, mixing until just combined to avoid a dense texture.
  5. Add Flavor: Stir in the fresh key lime juice, key lime zest, and fold in the sour cream until evenly spread throughout the batter.
  6. Bake: Transfer the batter to the prepared baking pan and spread it evenly on top. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cooling: Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For a shiny and glossy finish, drizzle a quick citrus glaze over the cake by whisking powdered sugar and fresh key lime juice until smooth.
  • To make a cream cheese frosting alternative as shown in the referenced YouTube video, you can use one stick of softened butter, an 8 oz block of cream cheese, confectioner's sugar, and lime juice.
