- 2 medium squash zucchini or yellow squash
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs panko or regular
- 1/4 cup grated Parmesan cheese optional
- 1/2 teaspoon garlic powder optional
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
