- 2 medium zucchini or yellow squash
- 1 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs or cornmeal
- ½ cup grated Parmesan optional
- Salt and pepper to taste
- 1 tsp garlic powder optional
- Vegetable oil for frying
Wash and slice squash into thin rounds.
Pat dry with paper towels.
Prepare 3 bowls: flour, beaten eggs, breadcrumbs.
Season flour with salt, pepper, and spices.
Dip squash into flour → egg → breadcrumbs.
Heat oil to 175°C (350°F).
Fry slices 2–3 minutes per side until golden.
Remove and drain on paper towels.
Serve immediately.
