Ingredients
  

  • 2 medium zucchini or yellow squash
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs or cornmeal
  • ½ cup grated Parmesan optional
  • Salt and pepper to taste
  • 1 tsp garlic powder optional
  • Vegetable oil for frying

Method
 

  1. Wash and slice squash into thin rounds.
  2. Pat dry with paper towels.
  3. Prepare 3 bowls: flour, beaten eggs, breadcrumbs.
  4. Season flour with salt, pepper, and spices.
  5. Dip squash into flour → egg → breadcrumbs.
  6. Heat oil to 175°C (350°F).
  7. Fry slices 2–3 minutes per side until golden.
  8. Remove and drain on paper towels.
  9. Serve immediately.

Notes

  • Use panko for extra crispiness.
  • Don’t overcrowd the pan.
  • Serve hot for best texture.
