- 8 oz elbow macaroni or other short pasta
- 1 cup sharp cheddar cheese shredded
- 1/2 cup parmesan cheese grated
- 1/2 cup romano cheese grated
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1/2 tsp paprika optional, for a mild kick
Prepare the Cheese Sauce
In a large saucepan, melt the butter over medium heat.
Stir in the flour to form a roux, cooking for about 1-2 minutes until it turns a light golden color.
Gradually whisk in the milk and heavy cream, stirring constantly to avoid lumps.
Continue stirring until the mixture thickens (around 5 minutes).
Add the Cheeses
Lower the heat and slowly stir in the sharp cheddar, parmesan, and romano cheeses. Stir until the cheeses are fully melted and the sauce is smooth.
Season with salt, pepper, and paprika (if using) to taste.
Combine the Pasta and Sauce
Bake the Mac and Cheese
Preheat your oven to 375°F (190°C).
Transfer the mac and cheese mixture into a greased baking dish.
If you prefer a crispy top, sprinkle a little extra cheese on top of the pasta.
Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
For a creamier texture, you can add extra cream or cream cheese to the sauce. Customize the dish with mix-ins like bacon, jalapeños, or different cheeses. For the best results, use a blend of high-quality cheeses and bake just long enough to get a golden crust on top.
