Ingredients

  • 8 oz elbow macaroni or other short pasta
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
  • 1/2 cup romano cheese grated
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1/2 tsp paprika optional, for a mild kick

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente (firm to the bite).
  • Drain the pasta and set aside.

Prepare the Cheese Sauce

  • In a large saucepan, melt the butter over medium heat.
  • Stir in the flour to form a roux, cooking for about 1-2 minutes until it turns a light golden color.
  • Gradually whisk in the milk and heavy cream, stirring constantly to avoid lumps.
  • Continue stirring until the mixture thickens (around 5 minutes).

Add the Cheeses

  • Lower the heat and slowly stir in the sharp cheddar, parmesan, and romano cheeses. Stir until the cheeses are fully melted and the sauce is smooth.
  • Season with salt, pepper, and paprika (if using) to taste.

Combine the Pasta and Sauce

  • Add the cooked pasta to the cheese sauce and stir until the pasta is evenly coated.

Bake the Mac and Cheese

  • Preheat your oven to 375°F (190°C).
  • Transfer the mac and cheese mixture into a greased baking dish.
  • If you prefer a crispy top, sprinkle a little extra cheese on top of the pasta.
  • Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.

Serve and Enjoy

  • Once baked, remove the mac and cheese from the oven. Let it cool for a few minutes before serving.

Notes

For a creamier texture, you can add extra cream or cream cheese to the sauce. Customize the dish with mix-ins like bacon, jalapeños, or different cheeses. For the best results, use a blend of high-quality cheeses and bake just long enough to get a golden crust on top.
